US Livestock Slaughter Statistics

US - Whilst live weight and carcase weights appeared to be up on 2008 figures, commercial red meat production fell according to USDA's National Agricultural Statistics Service (NASS).

Commercial red meat production for the United States totaled 4.15 billion pounds in December, down slightly from the 4.16 billion pounds produced in December 2008.

US Monthly Commercial Red Meat Production

Beef production, at 2.13 billion pounds, was two per cent above the previous year. Cattle slaughter totaled 2.75 million head, up three per cent from December 2008. However the number of cattle slaughtered throughout 2009 fell compared with 2008 figures.

Veal production totaled 13.1 million pounds, two per cent below December a year ago. Calf slaughter totaled 92,300 head, down two per cent from December 2008.

The average live weight was down seven pounds in December from the previous year, at 1,296 pounds. However the figures below shows that cattle weights were higher than 2008 weights for the majority of the year. The average calf live weight was down five pounds from last year, at 240 pounds.

January to December 2009 commercial red meat production was 49.3 billion pounds, down two per cent from 2008. Accumulated beef production was down two per cent from last year, veal was down three per cent and pork was down two per cent from last year.
