Developed by EBLEX master butcher Dick van Leeuwen, the butchery cutting demonstration videos feature a range of new cuts and are available to view online at www.eblextrade.co.uk.

The videos demonstrate how using seam butchery techniques, as opposed to traditional butchery methods, can add significant value to each primal and produce cuts which are more suited to today’s consumer.

Featuring a range of alternative beef cuts from the Topside, Thick Flank, Rump, Leg and Chuck primals, the step-by-step guides are an excellent training tool for those looking to develop their butchery skills.

Currently there are 18 videos on the website which show seam butchery techniques for 20 beef cuts. A range of lamb cutting videos will be added in the near future.
