US - The USDA's National Agricultural Statistics Service (NASS) comment on livestock slaughter statistics such as beef and veal in their monthly Livestock Slaughter Report.

Commercial red meat production for the United States totaled 3.73 billion pounds in May, down five per cent from the 3.92 billion pounds produced in May 2009.

Beef production, at 2.09 billion pounds, was four per cent below the previous year. Cattle slaughter totalled 2.79 million head, down two per cent from May 2009. The average live weight was down 15 pounds from the previous year, at 1,249 pounds.

Veal production totalled 10.1 million pounds, two per cent below May a year ago. Calf slaughter totalled 60,400 head, down eight per cent from May 2009. The average live weight was up 18 pounds from last year, at 286 pounds.

January to May 2010 commercial red meat production was 19.7 billion pounds, down two per cent from 2009. Accumulated beef production was down one per cent from last year, veal was down two per cent, pork was down four per cent from last year, and lamb and mutton production was down three per cent.
