UK Slaughter Statistics July 2008
UK - Recent figures collected on the Defra Slaughter Statistics survey have revealed that the number of steers and heifers sent for slaughter in June fell sharply compared to the previous two months.

Young bulls, cows and adult bulls followed a different trend and all rose slightly. Figures for calves remained steady at two thousand heads, as it was last month.
The surveys of slaughterhouses also collect information on the meat produced which enables average dressed carcase weights to be calculated. They revealed that the carcase weight of steers remained exactly the same in June, as it was in May, at 360.7 kilogrammes. Meanwhile heifers rose slightly, young bulls fell, cows and adult bulls remained steady and calves jumped up from 43.8 kilogrammes to 57.2.
Information on meat produced is also collected. This enables the total quantity of meat produced in the United Kingdom to be calculated. Home-killed production includes livestock imported into the United Kingdom for slaughter in the survey. According to Defra total beef killed was 65,000 tonnes in June, a slight increase on the 64,000 killed in May.
The average monthly slaughterings are affected by the number of weeks in the month. In order to provide a better, and more immediately accessible to readers, measure of trends over time, the following tables show average weekly slaughterings for each of the last twelve months.
