The National Cattlemen's Beef Association, using beef checkoff funds, will begin discussions next week in Denver on how to persuade Americans to add one evening beef meal every two weeks.
That's all it would take to raise beef consumption by 10 percent and stop chicken from approaching the dominance of beef in the American diet, said Rick Husted, chief operating officer of the association.
