LMC Report: Beef Carcase Specifications

NORTHERN IRELAND, UK - There has been considerable turmoil, particularly among beef finishers, over recent weeks following changes in the payment structure for cattle. The Livestock and Meat Commission (LMC) believes that over the long term the changes move towards a rebalancing of cattle values, to more appropriately reflect the relative values in the marketplace.

However, there is discontent regarding the abruptness of the changes. It is, of course, part of LMC’s role to advise producers on the characteristics which livestock should possess in order to be suitable for the market.

Against this background, and to allow Northern Ireland producers to better understand market requirements, LMC has contacted all of the major customers, buying beef from Northern Ireland, for an update of their beef carcase specifications; where they have such specifications.

Once this information is received, it will be published in the Bulletin – LMC expects that this will allow both producers and processors to align their businesses more appropriately in regard to the production and valuation of cattle. It is expected this information will be published within the next two weeks.
