UK Slaughter Statistics - December 2008 UK - Recent figures collected on the Defra Slaughter Statistics survey have revealed mixed results for UK slaughter estimates in November.

According to the Department for Environment, Food and Rural Affairs 78,000 steers were slaughtered in the month of November - a decrease on both the months of October and September. Heifer slaughter stood at 62,000; young bulls were down at 19,000 and calves were down at 5,000 also. Cows and adult bulls saw a slight increase in slaughter rates, totalling an estimated 57,000 by comparison with September's 48,000.

Average dressed carcase weights were mostly down across the sectors. According to Defra figures, steers weights were down at 349.3 kilogrammes - a slight decrease on the previous couple of months. Heifers remained steady at 305.4 kilogrammes, whilst young bulls weights were up slightly by comparison with October. Calf weights were also up on October, but still down when compared with September.

Monthly home killed production of meat changed little. Beef totals came in at 70 thousand tonnes, by comparison with September's estimate which was 71 thousand tonnes.

In order to provide a better, and more immediately accessible to readers, measure of trends over time, the following tables show average weekly slaughterings for each of the last twelve months.
